2–3 eggs · 250 g cheese · 2 chunks of unsalted butter · Oil · Salt · Chilli flakes · A few garlic cloves

How to Cook Gondo Datshi

Cooking time: 10 minutes

Step 1: Grate or crumble the cheese using your fingers to form fine pieces — the finer the crumble, the creamier the result.

Step 2: Crack fresh eggs into a bowl and whisk until light and fluffy.

Step 3: Mince the garlic cloves into thin slices.

Step 4: Heat your pan and melt the butter until it begins to foam.

Step 5: Add the garlic slices and fry for 2–3 minutes until golden and aromatic.

Step 6: Mix the cheese and whisked eggs together in the bowl, then pour the mixture into the pan.

Step 7: Gently stir for 2–3 minutes as the eggs set and the cheese melts into the mixture.

Step 8: Season with salt and dried chilli flakes to taste.

Step 9: Continue stirring for 1–3 minutes more. When the butter rises to the surface, the dish is ready.

Step 10: Remove from heat and serve immediately — with steaming red rice or slices of bread.
